Fool-Proof Sticky Rice (Pressure Cooker)

This rice is super easy and a great crowd pleaser!
You need:
Short grain white rice (I used Calrose)
Sugar
Salt
Rice Vinegar
This uses a pressure cooker and I have done this in multiple different types. The ratio of rice to water is 1:1. I know that many people have lots of opinions on this, but I have yet to have it fail.
The KEY is to wash the rice. You have got to uses a micro-strainer. Rinse however much rice you use in this strainer with COLD water until the water runs almost clear, and you have to move the rice around and mix it up to really get it washed. This process can take 2-5 minutes depending on the quantity of rice.
Recipe, for 4 cups of white rice.
Ingredients:
2 cups of white rice
2 cups water
1/2 tbs salt
Seasoning:
2 tbs rice vinegar
2 tbs hot water
1 tbs sugar
Measure and rinse thoroughly as above 2 cups of rice with tons of water. Drain well, as dry as possible. Add to your instant pot/pressure cooker, add 2 cups of water and a pinch of salt. Set to seal and high pressure for 4 minutes. For every 2 cups of rice more you make add 1-2 minutes of time.
While rice is cooking mix together your seasoning mixture in a small bowl and dissolve the sugar well.
When the cooker is done, quick release the steam and with a large wooden spoon mix the rice well and then add in your seasoning mix in about three portions mixing well in between.
Serve immediately! It's delicious.
