Firecracker Shrimp!
This is a recipe for the whole family to love! And as always I recommend getting any littles in the kitchen when you’re dredging, many hands make light work!
1 lb. of peeled, deveined, thawed shrimp
Ingredients for mix:
1 cup flour
1/2 cup corn meal
1 tbs garlic powder
1/2 tbs seasoning salt 🧂
1/2 tsp chili powder
Few dashes white pepper
You’ll also need three eggs 🥚 and panko bread crumbs.
Sauce:
3-4 tbs soy sauce
1tbs ketchup
1tbs strawberry jam
1tbs honey
1-2tbs gochujang
Dash garlic powder
1 tsp grated ginger
2 tsp sriracha
1-2tbs sugar
2tbs hot water
2tsp chili flake
3-4 tbs Mayo (optional)
To make:
Butterfly your shrimp, and combine your dry ingredients. In another bowl whisk three eggs along with a heaping tbs if your powdered mix. In a third bowl add about 2-3 cups plain panko breadcrumbs.
Dip shrimp that’s been butterflied and pat-dried in mix, then egg, then panko and set on a tray. Repeat and do all shrimp. Get someone to help :)
In a small bowl vigorously whisk all the sauce ingredients incorporating each one well in order.
Fry your shrimp in oil 1-2 mins on each side at about 375F. Or air fry at the same temp for anywhere 7-9 minutes. You have to keep an eye on them in the air fryer. And spritz them with cooking oil or it won’t crisp properly with the panko. It’ll burn instead.
I just hand dipped the shrimp quickly in the sauce and served over rice! Sprinkled a few extra chili flakes on top for color and flavor 🌶
