Easy (Wet) Shrimp Fried Rice

This dish comes together in just about 20 minutes. It's super easy and delicious and can be made with most ingredients on hand. Do keep in mind it's not an authentic fried rice recipe, Uncle Roger will roast me. It's a wet rice and is a tad sweet and Americanized.
Ingredients:
3 cups day old white rice
1/2-3/4 lb. thawed shrimp (deveined and no tails)
3-4 cloves of garlic minced
1 tsp ginger paste (optional)
1 small white onion, chopped roughly
1/2 package frozen pea, carrot, and green bean blend
3-4 tbs dark soy sauce**
4-5 tbs oyster sauce (I used hoisin sauce and it turned out great)

In a wok or large pan, get some oil to coat, and get it HOT, when you see a little smoke, turn down your heat and add in your white onion. Once it has some color, about a 2 minutes, add in your garlic and ginger. Sautee for 2 minutes. Add in your frozen veggies. Once your pan or wok has returned to heat, add in your shrimp with some salt and pepper. Toss regularly.
After your shrimp is cooked, approximately 4-5 minutes (it will turn white and curl in on itself) You have a choice. I like to cook my egg in a separate pan and I add it at the end. You can also just create a divot in the goodies you are currently cooking and scramble it right there. Your choice.
Once the egg is cooked, to your pan add your rice and break it up! You want every grain separated as much as possible. As it heats, it will get easier. Once your rice is mixed with the veggies and shrimp, add in your sauces and turn constantly to coat well.
Taste! Does your rice need a little more depth, is it kind of bland? Add a bit more soy and oyster sauce. Cooking is a journey.
Top with green onions before serving. Enjoy!
** if you can't get dark soy, don't panic, normal soy is fine, just add a 1/2 tsp of sugar to your soy sauce mixture and dissolve it.
