Clothespin Tacos

These tacos are so fun and easy!
Time: approx. 30 mins Serves: a small army (15 - 20 tacos)
Ingredients:
- 2 lbs. cooked taco meat - slightly cooled so not to burn yourself.
- 3 cups shredded Mexican blend cheese
1/2 finely diced white onion
White or yellow Corn tortillas
Oil for frying

This recipe is so easy and just came to me as I have been making fried tacos lately, and struggling to keep them closed while frying. It just hit me, a clothes pin!
Method:
Take your tortillas and wrap them in a damp tea-towel or kitchen towel and microwave on a safe dish for approximately 1 -2 minutes until warm and pliable. Flip half way.
Keep your tortillas in the towel while working to keep them warm and pliable. Take a tortilla and in the middle spread about a table spoon and a half of cheese on half the tortilla followed by a teaspoon of onion, and then 1 and a 1/2 taco meat. Fold over the other half of the tortilla and firmly press down on the tortilla. It should look like a little pocket. Try to keep your filling centralized. Pinch together firmly with a clothespin at the top and let sit on its side until ready to fry.
Heat your oil up to 350F and fry your tacos for about 1 minute or 30 seconds per side depending on your oil situation. If you are using a pan, heat on medium heat until your oil shimmers, it may take 3-4 minutes until it's ready. You can always test by throwing a single tortilla into the oil and seeing if it fries properly. It's always good with a little salt on it after :)
