Chick-fil-a Copycat Nuggets

These nuggets are absolutely amazing! And now you can make them at home and not deal with supporting homophobia!! Finally, something to feel good about in a pandemic. 🤣
Ingredients:
1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
Pinch white pepper
1/2 cup dill pickle juice
1 1/2 cups milk, divided
2 large eggs
1 1/2 cups all-purpose flour
2 tablespoons confectioners’ sugar
Salt and pepper
Johnny’s seasoning salt or comparable all-purpose seasoning salt.
Method:
Combine your pickle juice (I like Claussen’s Pickles) and 1 cup milk with a pinch of white pepper. Add in your chicken breast chunks and allow to marinate at least 45 mins. The last 15 mins should be at room temperature.
In a large bowl or sturdy paper bag, combine the flour and powdered sugar as well as a pinch of salt and pepper. Mix well. Beat your eggs and combine with remaining milk. Drain the chicken and re-add to you new egg and milk mixture. After coating in the wet, shake off any excess moisture and then add it to your flour mixture in batches. Seal the bowl or your bag and shake well, coating all the chicken evenly, as you remove it pat the chicken to really get it stuck on there. Coat all of your chicken while your frying oil heats up. You’ll want to fry at about 360* F For roughly 5-6 minutes (three minutes on each side). Make sure they are golden brown and done by taking the internal temperature. Chicken needs to be cooked to at least 165*F internally.
As they come out set on a rack to dry or at least in a paper towel. Sprinkle well with your seasoning salt in both sides. Served immediately as they are delicious!!
